Yummy - Wood Fire Chef’s Dinner at Osteria Via Stato

One of Sarah and my favorite restaurants is Osteria Via Stato on State Street in Chicago. Italian at its best. We have taken Katherine McGiveny, our mothers, and have gone many times the two of us. The last time we went, head chef David DiGregorio came out and chatted with us and served us a Candied Orange and Hazelnut Gelatto desert. We loved it, but really were warmed at how down to earth and friendly Chef DiGregorio was. As we walked out of the restaurant that night, I noticed a sign that talked about joining Chef David for a Wood Fire Chef's dinner. We loved the idea and invited Ed and his foodie significant other.

Last night, the 4 of us went to the event. 6 people sit at what you would call a bar, except behind the bar is a wood fire oven and the prep station. Chef David cooked and served us

  • Homemade bread with olives
  • A cheese plate of Parmesan and young Sardinian pecorino (it was supposed to be just one cheese, but foodie brought up the pecorino and he added it)
  • Oven roasted Onions, an Osteria special
  • Meatballs with Parmesan cheese
  • Marinated Beets with Goat Cheese and Greens
  • Wild Mush Risotto
  • Home made pasta with free range Chicken
  • Beef Short Ribs on parsnips
  • A desert tray with chocolate covered nuts, chocolate dips Gooseberries, a orange macaroon cookie, and this amazing flavored shaved ice with blood oranges

Chef David added to the evening buy offering us ChocolateChello, which they make there. When he asked if we wanted Chocolatechello or Lemonchello, Ed's comment was "Chocolate is always good" ... it was amazing! He even brought out a candle in a treat for one of the other guests, who was celebrating his birthday.

The food was great, company was very good, and Chef David took amazing care of us. He even put up with all of my questions :-). All of that, and a glass of champaign to start the evening, for $50 a person. Considering that you will spend a minimum of $35 on their Italian Family dinner service plus wine, that is an amazing deal. If you are looking for a great evening of food, call Osteria and sign up. They only do it on Wednesdays and there is a bit of a wait. If you can not do that, just eat there. It is our favorite restaurant.

    Good food makes people happy. Hunger and lack of food makes people sad.

    It's amazing how much food controls our mind and mood, and even more amazing that we don't realize it.

    If you feel depressed, try eating good food, but remember metabolism - don't eat too much at once, but smaller portions over time. That way your body doesn't go into the "save mode" and convert all nutrition into fat, but keeps burning the nutrition in a constant stream.

    It's said that if you eat more than 5-6 times a day in regular intervals, your body's metabolism starts to work properly. If you eat 3-4 or less times a day, your body will go into the "save mode" and convert almost everything you eat into fat, for reserve. But since you usually also eat less in "save mode", your body weight will stay constant, however at a steady high weight. I think this has historical reasons, as in stone age there was not a lunch time - people ate when they could, but of course they also moved their body a lot more, since they didn't have computers and internet.

    I am trying at the moment to eat about 6-7 times a day, smaller portions, but a total of less what I ate before with 2 meals per day. I think it has worked for a certain amount, but the daily work lunch time kinda does not fit into the pattern.
